I'm not the gal to come to when wanting something spicy. I love spice, just not the heat of spicy foods. For this recipe, I had to really expand my tasters group to make sure this recipe is on point. Yes, I too tried it. I just had to make sure I have a glass of water next to me when I ate it! Not only did this honey chipotle sauce turn out magnificently, but it's a versatile one you'll want to keep in your fridge at all times.
The More You Know
I'm all about quality. That's why I use Chico Honey Co.'s honey in this sauce. Honey is one of those products that shouldn't be bought from the knock-off brand. You'll notice the difference for sure. This sauce is meant to taste sweet at first, then the heat right at the end. Without the right honey, this won't happen and you'll be writing me saying my recipe is off. But no honey, it's you. (see what I did there)
Honey Chipotle Dipping Sauce
Have a party coming up? This sauce will be your best friend. The honey balances the heat. It pairs well with veggies and chips alike. My personal favorite are the sweet potato chips. Mmmmm.
Honey Chipotle Marinade
This marinade holds well whether you are prepping your meat 4 hours early or quickly grilling and only have time to brush the sauce on as it cooks. It's completely amazing on chicken and steak.
Honey Chipotle Salad Dressing
Holy Toledo, this sauce is bomb as a dressing. I like it on a salad with steak, baby greens, bell peppers and black beans. It gives it a South of the Border type kick that is soooo satisfying. Here I pictured a classic green salad with an avocado sun in the middle. If you can believe it, this salad tastes just as good as it looks!
Have I mentioned how great the color of this sauce is? Talk about a perfect recipe for the fall season! Its orange hue will make it look like you themed your meal. How fancy are you right now? You're welcome

Honey Chipotle Sauce
3/4 cup [paleo mayo|http://sweetestlemonade.com/paleo-mayo/]
4 T [Chico Honey Co. California Wildflower| https://www.chicohoneyco.com/]
2 tsp [chipotle powder|http://amzn.to/2e0lfPs]
2 tsp apple cider vinegar
1/2 tsp salt
Make sure you've already made your paleo mayo or purchased it before starting this recipe.
In a small bowl, combine all ingredients.
Using a whisk, blend together all the flavors.
Look for clumps. You don't want ANY clumps of chipotle powder in there so whisk whisk whisk!
The color will look slightly pink/orange. As time goes on, the sauce gets more vibrant in color.
If not serving immediately, refrigerate.
Honey chipotle sauce will last in the fridge for up to 2 weeks.
