Peanut Butter Honey Banana Granola Bars

Do you remember eating a peanut butter, banana and honey sandwich as a kid? I do. I wasn't a huge fan of peanut butter back then, but whenever it was paired with something sweet I'd eat it. That sandwich was my favorite way to eat peanut butter!

Now that I'm an adult I can't get enough peanut butter! I love it freshly made, with nothing added to it. Here in Northern California we are so spoiled. We have stores where you can buy peanut butter freshly made right from the grinder. While I do like making it at home myself, I have to admit that when you've committed to eating healthy, real food, it's a breath of fresh air to be able to pick something up at the store instead of having to make it!

This idea came to mind 3 weeks ago while pondering what to make for a friend of mine who was coming over to visit. I wanted something soft, easy to grab and take into our living room so we could chat. One of my favorite things to do is have people over, offer them something to eat that pairs well with tea or coffee, and then proceed to talk for an hour or so. Diving into deep, meaningful conversation is pretty much my love language. I can have the roughest day with the kids, an endless amount of laundry to do and miss my morning workout-but if I get a talk in with someone- I'm golden.

When I made the first batch, my son Josh (the advice-giving 8 year old of mine) suggested I change something to make them sweeter and a little moister. He was right.

I played around with a couple more batches and came out with these beauties!

Peanut Butter Honey Banana Granola Bars with Caramel Drizzle!

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: 8-12 granola bars, depending on the size of the pan

Ingredients:

Instructions:

  1. Preheat the oven to 350°. Spray a 9x13 pan (for thin bars) or a 8x8 pan (for thicker bars).
  2. In a large bowl add all ingredients.
  3. Using a stiff rubber or wooden spatula, begin mashing the banana into the granola mixture.
  4. Stir everything together until thoroughly blended.
  5. Spread batter into the pan.
  6. Bake for 15-18 minutes.
